Cut chicken into 1-inch cubes and toss with the bread crumbs. You want to get the chicken as coated as possible, sometimes this means pressing the breadcrumbs into the chicken.
Heat your oil in a large skillet. Once your oil is heated, add your chicken to the skillet ensuring you get a good crust all over the chicken. Let the chicken cook for 8 to 10 minutes.
While your chicken is cooking prep your other ingredients and open each pita pocket.
Once your chicken is cooked, assemble your chicken pitas. I first place lettuce in the pita pocket, then chicken, then drizzle ranch of the chicken, add cheese and then avocado!
