Breakfast is a family favorite in my house, my ten-year-old son could eat breakfast for all three meals. As much as I love breakfast, it’s not my favorite thing to cook. So I’m always on the hunt for quick and easy breakfast options.

Now that football season has started for my son, I need to have quick and easy snack options on hand for him. These breakfast frittata muffins are perfect for a quick on the go meal. Not only are they healthy but they are packed with protein which is perfect for my son.

Here's a quick and easy breakfast option. These hame and vegetable frittatas are a perfect on the go breakfast or snack option.

 

Ham and Vegetable Frittata Muffins

This breakfast recipe cooks up in under 30-minutes, major win for busy families. For this recipe, I used Hillshire Farm Naturals Ham, which I was able to pick up at Safeway.

I used Hillshire Farm Naturals Ham because it’s 100% Natural! There are no artificial ingredients (minimally processed), preservatives or colors.

Ingredients: 

  • Hillshire Farm Naturals Ham
  • 10 eggs
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1/2 cup parmesan cheese
  • 1/2 tsp. salt
  • 1 tsp. pepper
  • baking spray
  • salsa (optional)

Here's a quick and easy breakfast option. These hame and vegetable frittatas are a perfect on the go breakfast or snack option.

Directions:

Pre-heat your oven to 350 degrees.

Chop your bell peppers and set aside. Dice up your ham into bite-sized pieces and set aside. You’ll then want to add your eggs to a medium sized mixing bowl, beat the eggs until they are nice and fluffy. Add your Hillshire Farm Naturals Ham, bell peppers, parmesan cheese, salt and pepper to the egg mixture.

Spray your muffin pan with baking spray and then add in your egg mixture, ensuring each muffin tin is at least 3/4 full. Place in the oven and bake for 20 to 25 minutes or until the egg is firm.

Serve warm or place in the refrigerator and enjoy the following day! You can top your frittata with salsa if you’d like.

Kristi, we love frittata and have it often. I recently made one with grilled vegetables, it was fantastic! These mini frittata are great for on the go eating. I can see young ones grabbing one on their way out of the door heading off to school. I will have to give these a try!
