30-Minute Chicken Pitas | Quick Dinner Ideas

Coming up with quick dinner ideas isn’t always easy when you’re a mom of four very active kids. Sometimes I feel like we are only home to eat, shower and sleep! With that said, I’m always on the hunt for easy dinner ideas.

I need dinner options that are going to be on the table quick! I also need options that are going to please everyone in the house.

This mama isn’t cooking separate meals for everyone! I’m all about those fast dinner ideas. Seriously, the easier the better!

Not to mention that since all my kids are in sports right now, I’ve been trying to ensure I provide them with home-cooked, healthy (or as healthy as possible) and locally produced food.

I’m so happy to say that I’ve partnered with Foster Farms to bring you this delicious 30-minute recipe from locally grown ingredients.

California is known for its amazing produce, which I use every single day.

Fun side note – I used to live in the lettuce capital of the world. In fact, I actually worked for Foxy Produce!

I always buy local produce! But did you know that all Foster Farms fresh chicken products sold in California are also locally grown in California?!

Okay, now with this easy dinner idea that I created with Foster Farms Simply Raised (without antibiotics) chicken.

Chicken pitas are my go to quick and easy dinner recipe. This 30-minute meal is so delicious and easy to make.

Chicken Pita's | Quick Dinner Ideas

Ingredients

  • 1 lb chicken breast
  • 1 cup shredded cheese
  • 1 cup bread crumbs
  • Ranch Dressing
  • lettuce
  • avocado
  • 1/4 cup oil

Instructions

  1. Cut chicken into 1-inch cubes and toss with the bread crumbs. You want to get the chicken as coated as possible, sometimes this means pressing the breadcrumbs into the chicken.

  2. Heat your oil in a large skillet. Once your oil is heated, add your chicken to the skillet ensuring you get a good crust all over the chicken. Let the chicken cook for 8 to 10 minutes.

  3. While your chicken is cooking prep your other ingredients and open each pita pocket.

  4. Once your chicken is cooked, assemble your chicken pitas. I first place lettuce in the pita pocket, then chicken, then drizzle ranch of the chicken, add cheese and then avocado!
