Instant Pot Soup: Vegan Instant Pot Recipe
This is a great soup to cook and keep in the fridge for a healthy lunch. If you are trying to incorporate more vegan recipes into your diet, you’re going to love this one!
2 Fresh Medium Sliced Zucchini’s
1 Cup Fresh Chery Tomatoes
4 1/2 Cups Vegetable Broth
1/2 cup Feta Crumbles (optional)
1 tbsp Salt
1 tbsp garlic powder
Combine Zucchini, tomatoes, vegetable broth, salt and garlic powder into your Instant Pot.
Press the steam button and set for 10-minutes. Tomatoes and zucchini should be soft but not mushy.
Garnish soup with Feta cheese (optional).
INSTANT POT SOUP: FRESH ZUCCHINI & TOMATO
- 2 Fresh Medium Sliced Zucchini
- 1 cup Fresh Cherry Tomatoes
- 4 1/2 cups Vegetable Broth
- 1/2 cup Feta Crumbles
- 1 tbsp Salt
- 1 tbsp Garlic Powder

Press the steam button and set for 10 minutes.

Garnish soup with ½ cup of feta.
