Instant Pot Peach Iced Tea

 

Beat the heat this summer with this refreshingly fruity iced tea.

The best part?

This quick and easy Instant Pot version is ready to enjoy in under 30 minutes!

It’s the perfect recipe to whip up for a summer party.

Another perk of this recipe is that the kids absolutely love it!

Seriously, mine went crazy for it.

Instant Pot Peach Iced Tea

Super easy instant pot iced tea recipe. Perfect drink for summer parties.

Tip: Remove tea bags as soon as the pressure has been fully released to prevent bitterness.

If you prefer stronger tea and want to leave the bags in longer, add a pinch of baking soda prior to brewing.

Another thing I love to do when making this Peach tea is to make a little extra and freeze it into ice cube trays.

I don’t know about you but I hate it when my drinks get watered down with ice.

Freezing some peach tea cubes is a great way to ensure you don’t end up with watered down iced tea.

If you want to make this iced tea adult friendly, try adding in about 2 oz of Vodka per glass. It’s super delicious version of a hard iced tea!

Another fun idea is to use this tea to make frozen popsicles for the kids.

You can even cut up some peaches to freeze inside of the popsicles.

You can get pretty creative when it comes to the things you can do with this recipe.

I might even try having it as a spiced tea during the winter.

Instant Pot Peach Iced Tea

  • 8 cups water
  • 6 organic black tea bags, paper tags removed
  • 4 fresh peaches, pitted and cut into chunks
  • 1 tbsp fresh ginger, finely minced

  • local honey to taste

Optional Garnish

  • 1 fresh peach, cut into thin slices
  • 8 fresh mint sprigs
  1. Add water, tea bags, peaches, and fresh ginger to Instant Pot and stir to combine. 

  2. Add lid and lock into place. Switch the vent to “Sealing” and set the “Manual” setting on normal for 5 minutes.

  3. When finished, allow pressure to release naturally (NR) for 10-15 minutes, then do a quick release (QR) to allow the remaining pressure to escape. 

  4. Carefully strain hot tea mixture with a fine mesh strainer to remove the solids. Pour the remaining liquid into a large, heat-resistant pitcher. 


  5. Sweeten with honey, to taste, and stir to combine. Cool slightly before serving over ice with peach slices and sprigs of fresh mint, if desired. Enjoy!

Healthy Mexican Horchata

What is Horchata?

Horchata is a Mexican rice drink that is made from soaking the rice in milk overnight.

Prep time: 15 minutes + time to soak (up to 8 hours)
Cook time: n/a
Serves: 4 – 6

Ingredients:

1 c. long-grain white rice, rinsed and thoroughly drained
1 small organic cinnamon stick
6 c. water, divided
1 c. almond milk
1/3 c. Medjool dates, pitted
2-3 T. honey, preferably local
1 t. vanilla extract
½ c. raw almonds

Optional garnish:
4 long cinnamon sticks
Ground cinnamon

Delicious Mexican horchata recipe

Directions:

1. Add rice, organic cinnamon stick, and 4 cups of very warm water to a medium-sized bowl. Let soak overnight at room temperature, or until the rice softens and the cinnamon stick is soft enough to break into several smaller pieces.

2. Transfer the rice mixture to a high-powered blender and blend to combine. Add 2 cups cold water, almond milk, dates, 2 tablespoons honey, vanilla extract, and almonds. Blend until thoroughly combined and no large solids remain. Taste and add additional honey, if desired.

3. Strain contents of blender with a fine-weave mesh strainer and 1-2 layers of cheesecloth. When finished, discard remaining solids in the strainer and transfer the reserved liquid to a pitcher or other container.

4. Refrigerate until chilled, or serve immediately over ice with whole cinnamon sticks or a sprinkle of ground cinnamon, for garnish. Enjoy!

This watermelon martini is one of my favorite drinks! I love all things watermelon so I guess it would make sense why I like it so much. This is a drink that I enjoy all year but it’s really yummy on those hot summer days.

It’s super fresh tasting and just feels like summer when sipping on it.

Watermelon Martini Recipe

For this recipe, I do make a simple syrup. If you haven’t made one before, don’t worry, it’s easy!

Ingredients:

1 cup watermelon juice
4 ounces vodka (get the good stuff)
1 lime, freshly squeezed
1/4 cup simple syrup
bowl of ice cubes
Salt or sugar for the rim (optional)
watermelon wedges for garnish

For the Simple Syrup:

1 cup sugar
1cup water

Directions:

You’ll want to start with the simple syrup. Add the water and sugar to a medium saucepan over medium heat. Stirring, until the sugar is completely dissolved. Set aside and let cool.

Take about 2 cups of fresh watermelon and run it through the food processor, you should end up with about 1 cup of watermelon juice.

Mix together the sugar and salt for the martini glass rim.

Rub some fresh watermelon around the rim, then dip the rim into the sugar/salt mixture.

Pour the watermelon juice, simple syrup, lime juice and vodka into a cocktail shaker. Add your ice and shake well.

Pour the watermelon vodka mixture into the martini glass and enjoy your watermelon martini!

Summer is quickly approaching and I could not be more excited! After a three year drought in California, we had one heck of a winter and I’m so ready to lay out in the sun and sip on a nice cold drink. This chavela drink is the perfect drink to have on a hot summer day!

Another reason I’m so excited about summer is that we’ll be moving into a brand new home! I can finally host parties with my friends and family and this chavela drink recipe will definitely be on the menu. Drinking a Corona Extra with friends and family just makes the occasion that more enjoyable and fun.

I’ve never been a big beer drinker but I’ve always been a fan of a Corona Extra with lime. I’m also a fan of Bloody Mary’s (light vodka please). In my hometown, chavelas were a popular drink choice at the local Mexican food restaurants. So yummy!

I’ve created my own spin on this yummy drink and I hope you enjoy it as much as I do.

Easy Chavela Drink Recipe

Ingredients:

1 Corona Extra

¼ cup of spicy tomato juice

1 tbsp. Mexican hot sauce

1 lime, sliced

1 stalk of celery

Kosher salt

 

Chavela Drink! Looking for a fun party drink? Tasty and easy alcoholic drinks are perfect any adult party. This easy chavela drink recipe is made using beer. It’s spicy and will remind you of a bloody mary with beer.

Directions:

Slice your lime into wedges, use one of the wedges and rub it around the rim of the mug.

Take your mug and rub it on a plate that has Kosher salt. You’ll want to get as much salt as you can around the rim of the mug.

Pour your Corona Extra into the mug, I usually end up using about ¾ of the Corona Extra depending on how big your mug is. You want to leave room for the spicy tomato juice.

Next pour in ¼ cup of spicy tomato juice, the hot sauce and squeeze one wedge of lime juice into your mug.

Add in your celery stalk and swirl around to make sure your drink is mixed together.

Now sit back and enjoy!

The flavors in this watermelon drink are flat out delicious! You are going to love this margarita. Normally, you could use a simple syrup to sweeten this drink but today we are using lemongrass and a ginger simple syrup. Yum!

It was an experiement for sure but the results are pure heaven!

This watermelon margarita is the perfect summer cocktail. If you need a fun party drink this is for you!

Watermelon Drink | Delicious Watermelon Margarita

Ingredients:

3 cups fresh seedless watermelon, cut into small chunks
2 t. lime zest
¼ cup fresh lime juice – approximately 2 whole limes
4 oz. white tequila
2 oz. triple sec
ice
ginger simple syrup, to taste
small watermelon wedges, for garnish (optional)

For the Rim:

3 T. coarse Himalayan sea salt, crushed
1 T. red chili powder (optional)

This watermelon margarita is the perfect summer cocktail. If you need a fun party drink this is for you!

Directions:

To line the rim of the margarita glasses, grind some coarse Himalayan salt in a coffee grinder or blender. (It will get dusty). Add the ground salt and chili pepper (if desired) to a shallow plate. Then, moisten the outside rim of each glass with a piece of fruit. Turn the glass at a 45-degree angle and roll it around in the salt or salt mixture on the plate.

Use a damp paper towel to tidy up the bottom edge so you have a nice line. Adding the salt to the outer edge only will prevent it from getting into your drink and affecting its taste.

To make the ginger simple syrup, add 1 cup water and 1 cup white sugar to a medium saucepan. Peel a 3” piece of fresh ginger and chop into small pieces before adding the pan. The smaller you cut each piece, the more surface area you will expose to the boiling sugar mixture. Bring mixture to a boil, then reduce heat. Simmer for 30 minutes. Remove from heat and allow to cool.

Place all ingredients except the simple syrup into a blender. Blend on high until pulverized. Pour into a small testing glass to taste. Adjust ingredients to balance the flavors to your liking. If needed, drizzle some simple syrup into the blender and blend until you reach the desired sweetness.

Pour into prepared margarita glasses and serve immediately.

Watermelon Daiquiri Recipe

Making this delicious recipe takes a bit of pre-planning but it’s still super easy to make! Just try to plan out the drink the night before to make everything quick and easy.

Ingredients:

2 cups frozen watermelon, cubed

1/4 cup lemon juice, freshly squeezed

1 tbsp. lemon zest

1/2 cup rum, any kind is fine but most people prefer a light rum

1 tsp. sugar

Directions: 

The night before, chop up your watermelon into cubes and freeze. I try to freeze the watermelon for 24 hours.

Take the frozen watermelon, lemon juice, lemon zest, rum and sugar and blend until well combined.

If the mixture isn’t slushy enough, you can add in about 1/2 cup of ice till the drink reaches the consistency you are after.

Serve in glass and top with basil and whipped cream if you’d like.

Slow Cooker Apple Cider

Ingredients:

½ gallon apple cider
1/3 c. brown sugar, packed
2 T. pumpkin pie spice*
2 t. real vanilla extract
3 cinnamon sticks
¾ c. homemade caramel sauce, divided** (recipe included below)
Maple-whipped cream*** (recipe included below)

Note: you can simplify this recipe quite a bit with the use of pre-made caramel sauce and whipped cream. However, for a truly decadent experience without all the artificial ingredients, give the homemade versions a try at least once.

If you don’t have pumpkin pie spice, you can make your own by combining 3 T. cinnamon, 1 T. ground ginger, 1 T. ground nutmeg, 2 t. ground allspice, and 2 t. ground cloves. Store in an airtight container.

Caramel Apple Cider Sauce:

½ c. heavy cream
1 c. white sugar
2 T. water
4 T. unsalted butter

Maple Whipped Cream:

1 pint heavy whipped cream
1-2 T. real maple syrup

Directions:

For the Caramel Sauce:

Pre-heat oven to lowest setting.

Warm the heavy cream in a small saucepan over low heat. (You’ll want to slightly warm the cream to prevent curdling when it is added to the hot liquid).

Add the sugar and water to a heavy-bottomed oven-safe saucepan and stir to combine. Set spoon aside and do not stir the sugar mixture again. Bring mixture to a boil over medium-high heat. If sugar crystals remain on the sides of the pan, gently brush them back down with a moistened silicon baking brush.

Continue boiling until the mixture turns a nice amber color. Do not overcook. If mixture gets too dark at this stage, you will need to start over. If a dark spot forms on one side due to uneven heating, lift the pan and gently swirl until the color is even again. Return pan to the burner and reduce heat when the desired color is achieved.

Slowly whisk in the warmed cream until thoroughly incorporated. Be very careful while doing so because the sugar mixture will be extremely hot and will bubble up when the cooler cream is added.

Remove from heat and add butter. Stir with a clean spoon until butter is totally incorporated into the mixture. Cool and store in airtight containers in the refrigerator for up to 5 days.

For the Maple Whipped Cream:

In a large glass bowl, blend 1 pint of heavy whipping cream with a hand or immersion blender until it doubles in size and changes the texture. Then, drizzle maple syrup into the bowl and continue blending until the mixture is light and fluffy.

For the Slow Cooker Apple Cider:

Add the apple cider, brown sugar, pumpkin pie spice, vanilla, and cinnamon sticks to your slow cooker. Cover and cook on low for 3 hours.

After 2.5 hours, stir in ½ cup caramel sauce. Cover and allow the flavors to mingle for remaining 30 minutes.

Remove and discard cinnamon sticks. To serve, ladle the hot cider into mugs and top with maple whipped cream and drizzle with additional caramel sauce.

One thing I like to do when I’m serving this lemonade on a hot day is to make some extra and freeze into ice cubes. Not only to the ice cubes look super pretty but it won’t water down your drink.

If you want to make this an adult watermelon drink, add in some citrus-flavored vodka.

This watermelon mint lemonade is the perfect summer drink.

Watermelon Mint Lemonade

 Ingredients:

Mint Simple Syrup (optional)
½ c. granulated sugar
½ c. water
¼ c. tightly packed fresh mint leaves stems removed and crushed

 

6 c. fresh watermelon, rinds removed and cut into chunks

¾ c. fresh lemon juice (6-8 medium lemons)

½ c. cold water, (plus more, if needed)

½ c. fresh mint leaves, tightly packed with stems removed

fresh mint sprigs, for garnish
lemon slices, for garnish

Directions:

To make the simple syrup, add the sugar, water and crushed mint leaves to a small saucepan and heat over medium-high heat. Stir until the sugar dissolves completely. Reduce heat to low and simmer for 10 minutes. Remove from heat and discard mint leaves. Cool completely before using.

Add watermelon chunks, lemon juice and ½ cup cold water to a blender and blend until liquefied. Pour through a fine mesh strainer to remove any larger particles. Taste and add more water, if needed. Sweeten with mint-infused simple syrup, if desired.

Bruise ½ c. fresh mint leaves with fingers to release oils and add to the bottom of a large glass pitcher or jar. If serving immediately, add ice cubes to the container and pour the watermelon mixture over top. Add fresh lemon slices to the container for garnish.

To serve, pour over ice and add a sprig of fresh mint and a lemon slice for garnish.

I seriously love making jello shots! Not only are they easy to make but they are a great party drink. These Irish jello shots are the perfect St. Patrick’s Day jello shots recipe. Technically, you can use them any time of year but the green does make them perfect for St. Patrick’s Day.

Green Cocktails | St. Patrick’s Day Jello Shots

INGREDIENTS:

3 packets of Knox unflavored gelatin, divided
2 cups water, divided
7 oz sweet condensed milk (only comes in 14 oz size, so 1/2 of a can)
1 cup vanilla vodka, divided and chilled
3 oz box lime or green apple JELL-O gelatin
2-3 drops orange food gel

DIRECTIONS

Step 1: In a small saucepan, boil 1 cup water.  Remove from heat and add 1 packet of unflavored gelatin.  Whisk vigorously until the gelatin is dissolved.

Step 2: Add the green jello powder and whisk until dissolved. Add 1/3 cup chilled vanilla vodka and stir well.
Step 3: Pour the green gelatin mixture into the bottom of each shot glass, filling 1/3 of the way. Chill for 1 hour or until the gelatin has “set.”
Step 4: Bring 1 cup water to a boil in a small saucepan.  Remove from heat.  Add 2 envelopes of Knox unflavored gelatin and stir vigorously until dissolved.
Step 5: Pour in the sweetened condensed milk and stir well. Add 2/3 cup of chilled vanilla vodka and mix well to incorporate.
Step 6: Pour half of the white gelatin mixture into a microwave-safe bowl, cover and chill for later use.
Step 7: For the middle layer, pour the remaining white gelatin mixture into each shot glass, filling 2/3 of the way.  Refrigerate for 30 minutes to allow the gelatin to “set.”
Step 8: When the middle white layer is “set, remove the remaining gelatin from the refrigerator (from Step 6). It will be set like jello, so you will need to microwave and stir it in 20-second increments until completely melted and smooth.

Step 9: Add 2-3 drops of orange food coloring and stir well to distribute the color.  Pour the orange gelatin on top of the middle layer, filling up to the top of each glass.  Chill for 30 minutes.

Step 10: Enjoy your holiday jello shots!

 Optional – garnish with whipped cream and sprinkles

This is the best Moscow Mule Recipe! Seriously, it’s so tasty and easy to make. Although Moscow Mules are meant to be enjoyed ice cold, there is something inherently comforting about the warm, spicy notes of ginger found in this classic cocktail.

You probably know that traditionally, Moscow Mules were served in copper mugs. Stunningly beautiful but we have also found these to be extremely unhealthy as well. Thankfully, most copper mugs sold today are lined with a non-reactive metal.

The best Moscow Mule recipe. So easy and tasty, it's the perfect party drink.

The Best Moscow Mule with Fresh Ginger Simple Syrup

 Ingredients:

2 oz. premium vodka

2 T. fresh lime juice

Ginger beer (enough to top off mug)

2 t. ginger simple syrup*, or to taste

Fresh mint sprigs, to garnish

Lime wedges, to garnish

Ginger Simple Syrup
½ c. water

½ c. white sugar

3” fresh ginger, peeled and cut into small pieces

Moscow mule recipe

Directions:

To make the ginger simple syrup, add water and sugar to a medium saucepan. Peel a 3” piece of fresh ginger and chop into small pieces and add to the pan.

Note: The smaller you cut each piece of ginger, the more surface area you will expose to the boiling sugar mixture. This will give your simple syrup a stronger ginger flavor.

Bring mixture to a boil, then reduce heat and simmer for 20 minutes. Remove from heat and let cool.

Fill copper mugs with ice cubes and add vodka and lime juice. Top with ginger beer and a drizzle of simple syrup. Stir to combine. Garnish with a sprig of fresh mint and a wedge of lime and serve immediately.
