This Weight Watchers Breakfast Casserole is absolutely delicious and the whole family will LOVE it! You’ll only need about 10 minutes to prep this breakfast casserole, making it a quick and easy meal.

Breakfast is actually my favorite meal of the day but it’s also the one I look forward to the least when it comes to cooking. 

Whipping up eggs and bacon is easy but also gets boring. I don’t want to spend a lot of time cooking in the morning, so I like having easy but healthy options. 

I have personally found that if I start my day off with a low-point breakfast, it sets me up for a good day. 

This is definitely a recipe you’ll want to add to your collection of Weight Watcher recipes. The best part is this is a recipe you can serve to the whole family. It doesn’t feel like a “diet” dish. I’m on the Blue Plan and this breakfast casserole is only 2 points. 

You’ll want to make sure to double check the points if you are on a different plan. 

Can I prep this casserole the night before?

Yes! In fact, 9 times out of ten, I always prep breakfast casseroles the night before. 

How do I know when the casserole is fully cooked?

You can use an instant read thermometer, you’ll be looking for a temp of 160 degrees. You can also insert a toothpick into the middle of the casserole and it should come out clean. 

Does this recipe reheat well the next day?

Yes, this is a perfect dish to eat over a few days. You’ll simply heat it up in the microwave for about a minute. I typically reheat in 30-second intervals. 

To make this dish, you’ll need the following ingredients. 

  • Ground Turkey Sausage Crumbles
  • Frozen (or fresh) pepper and onion blend
  • Shredded Hash Brown Potatoes
  • Reduced Fat Shredded Cheddar Cheese
  • Skim Milk
  • Eggs
  • Hot Sauce (any kind you like is fine)
  • Salt & Pepper

To get started, you’ll want to pre-heat the oven to 350 degrees. You can skip this step if you are prepping the casserole the night before. You’ll want to coat a 9×13 baking dish with Olive Oil Spray or Pam. 

Heat up a large skillet, you can use some Olive Oil Spray or PAM. Add the turkey sausage crumbles, onion and peppers to the pan. Sauté until the onion and peppers are cooked and the turkey sausage crumbles are warm. 

Spread the hash browns over the bottom of the baking dish. Top with the cooked sausage, onions & peppers. Add your shredded cheese and then stir to combine all the ingredients. 

In a medium bowl combine milk, eggs, hot sauce, salt and pepper. Whisk well and then pour over the top of the hash brown mixture. 

Bake in a pre-heated over for 50 – 60 minutes or until the casserole has fully set.

Simple Weight Watchers Breakfast Casserole

Ingredients

  • ¾ cup ground turkey sausage crumbles
  • 1 12-ounce package frozen pepper and onion blend
  • 1 cup frozen shredded hash brown potatoes
  • 1/3 cup reduced fat shredded cheddar cheese
  • ½ cup skim milk
  • 6 eggs
  • 1 teaspoon hot sauce
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions

Preheat oven to 350 degrees. Prepare a 9x13 baking dish by spraying with nonstick cooking spray.

Heat a large skillet over medium heat and add the sausage crumbles and frozen peppers and onions. Cook until the sausage is warmed and the peppers are cooked, then remove from heat.

Spread the hash browns over the bottom of the baking dish. Top with cooked sausage, peppers, and onions. Add the shredded cheese. Stir to combine all the ingredients.

In a medium bowl, combine the milk, eggs, hot sauce, salt, and pepper. Whisk until well mixed, then pour the mixture over the top of the hash brown mixture.

Bake in the preheated oven for 50 to 60 minutes, until the center of the casserole is set.
